Our February honey is my all-time favorite infusion: hibiscus-infused honey.
This infusion is extra special because I use roselle (hibiscus) grown at Plant it Forward. Plant it Forward is a Houston urban farm that trains and supports former refugees to grow their own farm businesses. I bought roselle from Constant, a neighbor of mine at the Urban Harvest Farmers Market. We removed the seed pods and dehydrated the flowers. Add those to honey, stirring frequently for a few weeks and bam - bright magenta hibiscus-infused honey.
What to do with hibiscus-infused honey? Well it’s a great finisher/drizzle for many dishes and desserts. Hibiscus-infused honey makes a nice vinaigrette or addition to herbal tea. However, my favorite way to enjoy it is in a cocktail! The bright pink color is perfect for Valentine's Day and it can brighten up any dish.
